CBC aka Chicken Broccoli & Cheese!

This is a BC classic! If you have ever been to a White Spot you know. I grew up eating this dish and still do. So you know I just had to figure out an easy version of this to make at home for a quick weeknight meal. Cooks in under 30 minutes and is delish! Give it a try, I guarantee you will be making it all the time!


Ingredients:


- 1 large broccoli crown

- 2 chicken breasts

- 1 medium onion

- 2 tbsp curry powder

- 1 tsp salt

- ½ tsp pepper

- 1 can of cream of mushroom soup

- ¾ can of milk


Topping:


- 3 tbsp melted butter

- 1½ cup panko breadcrumbs

- 1 cup shredded cheddar cheese


Directions:


Cut your broccoli into florets and steam until fork tender. Dice the onion and cut your chicken into bite size pieces.

In a large skillet, that can go in the oven, sauté onions until soft. Add in curry powder and fry for about 30 seconds. Then add in your chicken. Season with salt and pepper and toss well. Add in the can of soup and fill the same can with milk ¾ full. Mix well and cook the chicken all the way through.

In the meantime, make the topping. Mix panko in with the melted butter and then add in your cheese. Once chicken is fully cooked add in your steamed broccoli and mix well. Turn off the heat and evenly spread out your topping on top.

Put it in on broil @425°F for a few minutes. Just until the cheese has melted, and the top is golden brown. Keep your eye on it as it can burn easily!

Serve with rice and enjoy!
