Egg salad sammies!

Ok who else grew up eating a soggy egg salad sammie for lunch! haha maybe just me?? Although yes my mom used to make it the night before and I would get a soggy sandwich it did not deter me from the fact that the egg salad itself was delish! It's healthy and delicious to have during the week for lunch in a sandwich or even in a wrap!

Ingredients:
- 6 eggs
- cup mayonnaise
- 1 celery stalk
- 1 large green onion or 2 smaller green onions
- 1 tbsp grainy mustard
- ¼ tsp salt
- ¼ tsp pepper
Directions:
Boil water. Once it is at a rolling boil add your eggs carefully into the pot. Cover and boil on high for 6 mins. Once done put eggs in an ice bath to cool them down immediately.
Finely dice celery and green onion. Peel eggs and chop them up and add to the bowl.
Add mayo, mustard, salt & pepper and mix well. Keep refrigerated.
