Lee's family cucumber salad

This is one of my ALL time favorite family recipes. There hasn't been a single person that has eaten this dish and NOT liked it. It's a staple on our dinner table and is a great way to get kids to love veggies! Super simple to make. A couple of old school tricks passed down to me by my grandmother and great uncle, ensure a crispy crunchy salad every time!
Ingredients:
- 5 small Japanese cucumbers/ 1 English cucumber
- 1 tbsp soy sauce
- 1 tsp white vinegar
- ½ tsp sugar
- 1 tsp sesame oil
- 1 tsp oyster sauce
Directions:
Make your sauce in a bowl and whisk together until well combined and set it aside.
Clean and dry your cucumbers well before cutting off the ends.
Then SMACK, yes smack the cucumber with the back of a knife. Then take out most of the seeds or the watery insides.
Then break up the cucumber into about 2-3” pieces. Do not cut it with your knife. Just use your hands to break them apart. They can be different shapes and sizes, that is the point. Then pour your dressing over and mix well. Enjoy right away!
