Lemon Thyme Chicken

This recipe is a great make ahead marinade and works well with any cut of chicken. Perfect summer dish!
Ingredients:
3 chicken breasts (can substitute for chicken thighs or drumsticks)
½ lemon
1 Tsp Thyme (fresh or dried)
5 garlic cloves
1 Tsp salt
¼ Tsp pepper
3 Tbsp olive oil
Directions:
In a bowl cut up ½ a lemon into wedges and squeeze the juice and throw in the rind and all. If your lemon is smaller you can use the whole lemon.
Then chop up your garlic and add it into the same bowl. (Doesn’t need to be too fine) Then add your Thyme. If you are using fresh Thyme, pluck the leaves off and give it a rough chop. You can also substitute for another herb here. I have used Oregano and Rosemary here. Use the same amount if you use Oregano. If you decide to use Rosemary use about ½-¾ tsp.
I like to cut on cooking time, so I cut my chicken breasts length ways so that it’s half the thickness. Add your chicken to the same bowl and then add your salt, pepper and olive oil. Let this marinade for as long as you can, but minimum is 10-15mins.
Tip: I like to marinade my chicken on the weekend, and put it all in a Ziploc bag and toss it in the freezer. Freezing in portion sizes helps too. It keeps marinating in the freezer and then you can pull it out ready to go whenever you want! Makes for a quick and easy dinner on a busy day.
I like to cook mine in an air fryer for 15-20 minutes. But you can also throw this on the BBQ, oven or pan fry.
