Meatballs & Mushroom pasta

SO easy you won't believe it! All you need is a can of soup for this easy pasta sauce!
Pull this out any day of the week that your whole family will love!

Ingredients:
Meatballs-
- ¼ cup breadcrumbs
- 4 tbsp milk
- 1 shallot
- 550g mix of ground beef & pork
- 1 egg
- 1 tsp salt
- ¼ tsp pepper
Sauce –
- 4 garlic cloves
- 400g sliced mushrooms
- 1 can cream of mushroom soup
- 1 can of milk
- ½ tsp salt
- ¼ tsp pepper
- ¼ cup pasta water
- 1 500g pack of pasta of your choice
Directions:
Start by soaking your breadcrumbs and milk in a bowl. Mince the shallot and add to the bowl. Add the remaining ingredients and mix well. DO NOT over mix. You will end up with a bouncy ball if you do. Using a small ice cream scoop for ease, scoop meatballs onto a parchment lined baking sheet. Broil @425°F for 15 minutes or until golden brown.
In a saucepan, sauté the minced garlic for a few seconds before adding in the mushrooms. At the same time boil water for your pasta and cook according to the package directions.
Cook mushrooms until tender. Then add the can of cream of mushroom soup and fill the same can with milk and add to the saucepan. Add salt and pepper to taste and allow it to come up to a bubble.
Drain your cooked pasta, add to the sauce and add in the reserved pasta water to thin out the sauce. Top with the cooked meatballs and dinner is served!
