Mom's Asian cold sesame chicken noodle

My mom used to make this for every party, picnic & potluck. Let me tell you it was always a hit and always the first dish to disappear! This is perfect for a quick and easy weekday meal on a hot summer's day. It is very flexible and versatile. Make it and believe me you will be making it again and again and again!



Ingredients:


- 1 rotisserie chicken (shredded)

- 1 carrot

- ½ English cucumber

- 1 bell pepper

- ¼ red onion

- 4 servings of any noodles (I like soba but I have used even spaghetti)

- Toasted sesame seeds for garnish


Sauce:


- ½ cup light soy sauce

- 1 tbsp honey

- 1 tbsp sesame oil

- ½ cup toasted sesame paste (you can use smooth peanut butter/tahini)

- ¼ cup pasta/noodle water

- ¼ tsp pepper

- 1 tbsp lemon juice

- 2 tbsp vegetable oil


Directions:


Julienne all the vegetables, which really in a fancy term means into matchsticks. Cut the red onion as thinly as possible as you will be eating it raw. Cook your noodles/pasta until al dente and run under cold water immediately and remember to keep back some pasta/noodle water for the sauce!

Shred the rotisserie chicken. You can also substitute any leftover chicken for this. Does not have to be rotisserie chicken. Pour half the sauce over the chicken and vegetables in a large bowl. Make sure it is large because you still have to add noodles. Toss well to ensure even coating. Then add the noodles and the remainder of the sauce and toss again. That’s it! Eat either cold or room temp! perfect for potlucks, picnics and hot summer days.
