Mom's secret roasted root vegetables

This is my mom's version of roasted root vegetables, and every time she used to make it, someone would always ask what is in it! So here it is. The cat's out of the bag. Here is her secret. Onion soup mix! Best roasted root vegetables you will have ever had! I guarantee it! So easy!


Convection roast @425°F


Ingredients:


- 2½ lbs potatoes or any root vegetables or a mix

- 2 packs of onion soup mix (I use the Knorr brand)



- 3 tbsp olive oil


Directions:


Cut your potatoes or any root vegetables into about ½” pieces. Place it on a lined baking sheet (I line with aluminum foil and parchment paper).

Sprinkle the soup mix and olive oil on top and give it a good mix.

Make sure the vegetables are in a single layer and place in the oven.



Roast for 20-30 minutes or until brown and vegetables are tender.
