My Guacamole

NEVER waste an avocado EVER AGAIN! Ok do you ever buy a bunch of avocados thinking your going to make a smoothie or make some fancy avo toast?? and then never get around to it? Cause I do..all the time! Best way to use up those avocados before they go bad is to make your own guac! Super easy and delish! I can eat 3 avocados in 1 sitting...if it's guac.

Ingredients:
- 3 medium ripe avocados
- ½ lime (approx.)
- ½ tsp salt
- ¼ of a red onion or 1 shallot
- 1 tbsp extra virgin olive oil
Directions:
Squeeze your lime into a bowl and add your salt. Then dice up either your red onion or shallot and put directly in the bowl with the lime and salt. Cut your avocados lengthways to open them up and pit them (either with a knife or with a spoon). Scoop out all your avocados into the bowl and smash away. I like my guacamole a little chunky so I just use a fork. If you like it creamier, then use a food processor or a blender to help. Taste before adding anymore salt or lime juice. At the end add the extra virgin olive oil. Toss in 1 avocado seed to help your guacamole from turning brown.
