My Xmas Roasted Yams/Sweet Potatoes

Convection roast @425°F


Cook Time: 20-25mins


Ingredients:


- 2½ lbs yams/sweet potatoes

- ¼ cup unsalted butter

- 3 tbsp brown sugar

- 1½ tsp salt

- ½ tsp pepper

- 1½ tbsp olive oil

- 1½ tbsp minced fresh rosemary or 1 tbsp dried rosemary



Directions:


Cut your yams/sweet potatoes into a bout 1 inch cubes. You can either peel or not peel them. Totally personal preference.

Place them on a baking sheet lined with aluminum foil and parchment paper on top to help with clean up. (Believe me, you will need it)

Mince the rosemary and sprinkle over the yams. Sprinkle over sugar, salt, pepper and olive oil.

Cut the butter into small cubes and add it to the pan. Mix everything well and place it in a preheated oven. I set mine at convection roast @ 425°F, because it cooks faster and browns nicer. However, you can totally put it on bake at the same temperature. It may take a little longer that’s all.

Roast until yams/sweet potatoes are fork tender and brown and caramelized.
