ONE pan shrimp orzo

This is soooooo easy and even more delicious! No you did not read wrong, this is all made in ONE pan! Cooks in under 30 minutes, perfect for a quick weeknight meal.

Ingredients:
- 5 garlic cloves
- 2 cups grape/cherry tomatoes
- 1½ lbs shrimp (peeled & de-veined)
- ½ lemon juiced
- 1½ tsp dried thyme
- ½ tsp salt
- ¼ tsp pepper
- 1 tsp olive oil
- ¾ lb orzo
- 3½ cup liquid (including 1 can of chicken stock)
- ½ tsp salt
- ¼ tsp pepper
Directions:
Mince garlic and cut your tomatoes into half. Season shrimp with the lemon juice, thyme, salt, pepper and olive oil and marinade for about 5 mins.
In a fairly wide pan sauté garlic in some olive oil until fragrant. Add tomatoes and fry until some of the juices come out. Then add the orzo and fry until pasta is well coated in the tomato juices.
Pour all the liquid in and stir constantly. Once it comes to a full boil turn the heat down to medium. Continue to stir to avoid sticking.
Once half the liquid has been absorbed turn heat down to low and continue to stir constantly until all the liquid has been absorbed and the orzo is cooked.
When it is fully cooked, turn the heat off and put the shrimp on top in a single layer. Put it in the broiler @500°F for about 5 mins. Keep your eye on it! It cooks really fast! The shrimp will turn pink once done. Dinner is ready!
