Quick Homemade Pesto

This recipe only requires 6 ingredients and 3 of them are pantry staples. It's quick, easy and delicious! Even my son loves it.


Ingredients:

- 1 garlic clove

- ¼ cup walnuts

- 2 cups basil leaves (approx.)

- ¾ cup extra virgin olive oil

- ½ tsp sea salt

- ¼ tsp black pepper

Directions:

I normally make my pesto in a food processor, but if you don’t have one don’t worry, you can make this many different ways. You can make this in either a mortar and pestle, or even just a regular blender or with a hand blender.

To start, turn on your food processor. Then add in your garlic clove. Once it is all minced you can add your walnuts. Again you can substitute other nuts here. You can use almonds, cashews or the more traditional pine nuts. I use walnuts because I always have some in my house and it is easy to blend up. Then add your basil leaves and pulse until the basil leaves are fairly chopped up. Once it is chopped up turn your food processor on and slowly add in your extra virgin olive oil from the top as the processor is running. Scrape the bowl and pulse a few times to make sure everything is blended evenly. Then add your salt and pepper and mix until well blended.

You can keep this in a glass jar for up to 10 days in the fridge, or you can also freeze it and use it later.
