Spam musubi

Ok who doesn't love spam musubi?! We were supposed to go to Hawaii in 2020 but then...well you know what happened. My kid is obsessed with these and honestly who isn't?! super easy to make and I make these and pack them for his school lunches all the time! Quick, simple and delicious lunch on the go!

Ingredients:
- 1 can of spam (cut into 7 slices)
- Furikake seasoning

- Seaweed sheets/Nori sheets

- Few cups of cooked rice
Terriyaki sauce:
- ¼ cup light soy sauce
- 2 tbsp mirin
- 2 tbsp sugar
Directions:
Cut your can of spam into 7 slices. Keep the can and wash it out well and line the inside of the can with saran wrap. Fry up your spam until golden brown on both sides and remove from the pan. Turn the heat down and pour in the soy sauce, mirin and sugar. Let it bubble up. Once it comes up to a bubble and is a little thicker add back in your spam. Coat both sides of the spam and turn off the heat.
Cut your seaweed sheets in half. Fill a third of the can with cooked rice. Pushing it down the best you can. Then sprinkle furikake seasoning on top. As much as you want. Then add a slice of the spam on top. Grabbing the excess saran wrap push down the musubi before removing it from the tin. Then wrap with the seaweed. If you need help sticking the seaweed together use a bit of the leftover sauce as a glue.
Wrap each spam musubi in saran wrap for best storage and enjoy!
