This is one of my son's favourite dishes! It's silky smooth and melts in your mouth.

Ingredients: - 2 large eggs - 1 raw salted duck egg - 1 century egg

- 1¼ cup cold water

Directions:

In a shallow dish that can be placed in a steamer, whisk together your 2 eggs and salted duck egg.

Peel and cut the century egg into small pieces and put them in the dish together with the rest of the eggs.

Then add your water and slowly mix.

Once the water in your steamer is boiling, you can place your dish in and cover. After 5 minutes, open the lid slightly to allow some of the steam to escape and close again.

Repeat this every 1 - 2 minutes until the egg is set when you jiggle the pan.

Takes approximately 7-10 minutes. Once done, you may drizzle some soy sauce and vegetable oil on top and serve.

Great with rice!
