Tomato Egg

If there is any dish that encompasses Chinese comfort food, this is it! Every family has their own version of it, but this is my version. My kid is obsessed with this dish! Super simple, quick and easy to pull together any day of the week!





Ingredients:

- 2-3 green onions

- 4 garlic cloves

- 2 medium ripe tomatoes

- 5 eggs

- ¼ tsp salt and pepper

- ¼ - ½ cup water

- ½ - ¾ tsp chicken bouillon powder

Directions:

Slice green onions and dice your garlic and put in one bowl.


Chop up your tomatoes into ½- inch dice.


In a bowl, scramble your eggs with ¼ tsp of salt and pepper.


Heat up a pan with vegetable oil and cook your eggs (scramble style) until almost cooked then set-aside.




In the same pan, heat up a bit of vegetable oil with the green onions and garlic until fragrant.




Then add your diced tomatoes and water.



Start with a ¼ cup water and then add a little more if needed (will depend on how ripe your tomatoes are). It shouldn't be too watery but just enough liquid to cook down the tomatoes a bit.




Once your tomatoes have softened slightly, you can then add the chicken bouillon powder.




Again, start with ½ tsp and add more if needed. Then add back in your eggs and toss through.

Taste and add more chicken bouillon powder or salt as desired with another ¼ tsp of pepper.
