Zucchini Pancakes

Ok this is seriously the easiest thing to make! Only requires 3 ingredients and can be done in minutes! Quick, easy & nutritious! It's a childhood fave of mine. Enjoy!
Ingredients:
1 medium zucchini
3 eggs
½ cup all - purpose flour
½ tsp salt
¼ tsp pepper
Directions:
Grate your zucchini into a bowl big enough to mix all ingredients together.

Depending on your zucchini, you may need to squeeze out a bit of your water, or adjust how much flour you need to add.
Add all 3 eggs into the bowl with the zucchini and mix well.

Then add your flour, salt and pepper and mix well.

Heat a frying pan with a bit of oil and add a large ladleful of batter into the pan, and spread it out a bit. (Honestly make whatever size or shape you like)

Make sure your heat is on medium, as you don’t want your pancakes to burn before they are ready to be flipped. Once you see the edges drying up, and the center of your pancake is relatively set, then you can flip them.

You can eat them as is, or with a bit of soy sauce or hot sauce!
