Mom's Pancakes

This is actually my mom's pancake recipe. I remember eating this almost every weekend, and watching my mom make these in minutes! It's so easy and is honestly closer to a crepe. Make it part of your family weekend tradition!

Ingredients:
- 3 eggs
- 1 tsp vanilla extract
- 3 cups milk (whole milk/2%)
- 2 cups all –purpose flour
- ¼ tsp salt
Directions:
Whisk the eggs, vanilla and milk together. Then add the sifted flour a cup at a time to the eggs and milk. Make sure to whisk until smooth. Then add salt. This pancake recipe is to have no lumps unlike the fluffy ones. So make sure you whisk well.
In a non-stick pan, heat up a little bit of vegetable oil. Make sure it is on high heat.
Once hot, ladle in enough batter to make a thin layer and spread evenly throughout the pan.
When you see your pancake batter drying up then it is time to flip. Let it brown for about a minute or so on the other side and your pancake is done.
