SUPER Easy Apple Hand Pies

This is my EASY version of an apple pie. Who has the time to make pie from scratch?! I mean we COULD find time, but let's be honest, that "time" is far and few in between. This recipe gives you the feeling of eating an apple pie with a LOT less work! Of course with a few tips and tricks along the way to help. This is a perfect fall recipe and makes your house smell absolutely delicious! It's also easy to grab on the go! Perfect snack or dessert with a big scoop of ice cream!
Bake at 375°F
Bake time: 15-20 mins
Yields: 8 hand pies
Ingredients:
- 2 lbs apples (½ granny smith & ½ mcintosh apples)
- ½ cup sugar
- ¼ tsp salt
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 2 tbsp unsalted butter
- 2 (10” X 10”) already rolled sheets of puff pastry (or you can buy the block and roll it yourself) - can be found in the freezer section of your grocery store
- 1 egg + 1 tsp water (egg wash)
- 2 tbsp vanilla sugar/sugar (optional)
Directions:
Peel and dice your apples into ½” to 1” pieces.
In a sauté pan, melt your butter. Once butter has melted, add your apples.

Then add all the spices, sugar, salt and lemon juice. Cook until granny smith apples are fork tender and the mcintosh apples have melted. (Approx. 5-10 mins)
Once apples are cooked, set them aside to cool completely before filling.
Tip: Make sure you keep the puff pastry in the fridge until ready to use.
Cut each sheet evenly into 4 squares.

Place the squares on a parchment lined baking sheet. Then add a heaping tbsp. of apples towards the corner of each square (Do not overfull, they will blow up!)

Then fold each pie into triangles, and press the edges together.
Take the back of a fork and crimp the edges to ensure the pies are sealed well.
Tip: If you find your fork sticking, just dip it in some flour to help.

Take a knife and cut 2 slits at the top of each pie, to let the steam escape when baking.

Beat an egg with 1 tsp of water to make an egg wash. Then brush this on top of the pies.

Now this next step is totally OPTIONAL. I like to sprinkle the tops with a bit of sugar (I use vanilla sugar, but regular sugar is totally fine).

Then put the pies in the oven and bake until golden brown and bubbly.
