The BEST fudgy brownies

These are (what I think) the BEST fudgy brownies. This is my #1 requested treat from my son for school trips, bake sales and apparently his friends love them too!




Bake at 350°F

Bake time 35 - 40 minutes


Ingredients:


- 170g of dark chocolate (at least 75% cocoa or bittersweet chocolate)

- ½ cup unsalted butter

- 1 cup sugar

- ½ cup brown sugar

- 3 eggs

- ¼ cup cocoa powder

- ¼ tsp salt

- ½ cup + 2 tbsp all purpose flour Directions:

Preheat the oven to 350°F.

Melt the butter and chocolate either in a bowl over a double boiler or in the microwave.


*If using the microwave, heat up 1 min at a time on medium heat. Check and mix after each minute to make sure you do not burn the chocolate.


Once fully melted, use a whisk and add your sugars until they have slightly dissolved in the warm chocolate. Then whisk in eggs 1 at a time.

TIP: the more you whisk the eggs, the shinier the top of your brownie will be.


Then sift in cocoa powder and salt and whisk to combine. Then switch to a spatula and fold in your flour. Once fully combined, pour the batter into a square pan that has been buttered and floured and lined with parchment paper with the ends hanging out for ease in lifting the brownies out when done.


Bake for 35 - 40 minutes or until you test with a cake tester and it is almost clean. Because it is a fudgy brownie, your cake tester won't be completely clean but mostly.


Let it cool in the pan on a baking tray for at least 30 minutes before taking an offset spatula or back of a knife to release the edges and pull up on the parchment paper and cool completely on a baking rack. 


Once completely cooled, you can then cut into your desired size. I usually get 9 brownies out of this recipe but believe me it's not a lot as they will disappear in a flash!
