My go-to Granola

This simple and quick granola is one of my go-tos for an easy breakfast or snack for my family.


Ingredients:


- 4 cups rolled oats

- 2 cups sweetened flaked coconut

- 2 cups sliced almonds

- 1½ cups craisins

- 2 tsp ground cinnamon

- ¼ tsp salt

- ½ cup vegetable oil (a tasteless oil)

- ⅓ cup honey

Directions:

Preheat oven to 350°F.


In a large bowl, toss the oats, coconut, almonds and craisins together. Then sprinkle cinnamon and salt on top and toss to evenly distribute.


In a separate bowl (I like to use a Pyrex measuring jar), mix together the oil and honey.

TIP: If you put oil first then the honey, the honey will slide right out of the container. 


Toss everything until evenly combined.


Pour mixture onto a large sheet pan that has been lined with either parchment paper or a silpat for easy clean up.


Place in the oven and bake for 25 - 30 minutes or until golden brown. 


Move granola mixture around every 10 minutes while in the oven to ensure even browning.


Once done, allow granola to cool completely in the pan.


Once cooled, store granola in an air tight container. It can keep well for 30 days if it lasts that long! Enjoy it either on its own or over some yogurt!
